Crumble rhubarb and apple slice

- 25g Irish butter, softened
- 1 apple, chopped
- 1 cooking apple, chopped
- 2 stick rhubarb, chopped
- 2 tablespoons brown sugar
- 50g all purpose flour
- 50g fine sugar
- 50g Irish butter, softened
- 50g silvered almonds
- 50g Irish porridge oat
- 1 teaspoon baking powder
- 1 butter puff pastry sheet, rolled
Directions
- Preheat the oven to 350˚F (180˚C).
- In a saucepan, over medium heat, melt 25g of butter and add the apples and rhubarb pieces. Add the brown sugar. Cook for five minutes until the apple are starting to soften. Remove from the heat and set aside to cool for a few minutes.
- Meanwhile, prepare the crumble topping by sifting flour into a bowl and adding the white sugar, 50g of butter, almonds, porridge oat, and baking powder. Combine until the mixture resembles breadcrumbs.
- Unroll the puff pastry and place it on a parchment-lined baking tray.
- Spoon the apple mixture on the pastry and scatter the crumble mixture over. Gently press to ensure the crumble is settled on the apple mixture.
- Carefully place in the oven and bake for 30 to 35 minutes or until golden brown and cooked through.
- Remove from the oven and serve warm with some cream or at room temperature with a warm cup of tea or coffee.
