Cucumber smoked salmon sandwiches with herbed cream cheese
Ingredients
- Sliced sandwich bread, any variety
- 1 package/container cream cheese
- 1/4 cup chopped mixed fresh herbs (dill, parsley, scallions, chives, etc.)
- 1 large English cucumber, thinly sliced
- 1 package smoked salmon, thinly sliced
- Cracked black pepper to taste
Directions
- Mix together the cream cheese with the chopped fresh herbs. You can use an electric mixer or mix by hand using a spoon or rubber spatula
- For each sandwich, spread both sides with the herbed cream cheese.
- Arrange the cucumber and smoked salmon slices as desired on one slice of the cream cheese-coated bread. Add freshly cracked black pepper to taste. Top with the second slice of cream-cheese coated bread.
- Slice sandwich into rectangles or triangles and trim off the crusts for an extra fancy touch.
- Repeat for as many sandwiches as you would like. Enjoy!
