Easy baked fragrant rice

Cooking rice on the stovetop might be the norm, but this recipe is easy to prepare and fail proof.  It takes slightly more time than rice cooked on the stove but it’s a great way to set it and forget it for 35 minutes.  There are also infinite ways to switch up the flavours by changing up the herbs, spices and cooking liquid.

Ingredients

  • 1-1/2 cups jasmine rice
  • 2-3/4 cup chicken broth (or vegetable broth)
  • 1 cinnamon stick, broke in half
  • 2 bay leaves
  • 2 tablespoons butter (or olive oil)

Directions

  1. Preheat the oven to 375F
  2. Add all the ingredients to an 8x11” glass baking dish.  Cover tightly with aluminum foil and place on the middle rack. Cook, undisturbed for 35 minutes.
  3. Remove from the oven and allow the rice to rest for five minutes.
  4. Remove the cinnamon and bay leaves and use a fork to fluff up the rice.
  5. Serve
