Use up your mashed potatoes to whip up this deliciously comforting winter vegetable chowder! Ready in 30 minutes or less, it has all the comforting creamy cheese flavour you could ever ask for.
Ingredients
2 cups mixed vegetables (frozen or fresh) roughly chopped
2-1/2 cups chicken stock
1 cup leftover mashed potatoes
1 cup milk
1 cup shredded cheddar
1/2 teaspoon pepper
1/4 teaspoon salt
Directions
Add the vegetables and chicken stock to a medium pot and bring to a simmer. Cook for five to eight minutes until the vegetables are tender.
Whisk together the mashed potatoes and milk in a medium bowl. Pour the potato mixture into the vegetables and stock and turn the heat to low.
Stir in the cheddar cheese and season with salt and pepper. Allow the cheese to completely melt into the sauce. Serve.
