3-1/2 cups (450 grams) all-purpose flour

2 teaspoons baking powder

2 teaspoons baking soda

2 teaspoons sugar

Pinch of sea salt

1/2 cups (100 grams) butter, chilled and cubed

1-1/4 cups (300 ml) milk
Directions
- Pre-heat the oven to 400°F
- Sieve the flour, baking powder and baking soda into a large bowl. Then stir in the sugar and a pinch of salt. Rub the butter into the flour mixture using your finger tips until it resembles fine breadcrumbs. Gradually pour in a sufficient amount milk to make a soft dough.
- Roll out the dough on a floured surface to a thickness of one centimeter. Cut into circles with a pastry cutter or an upturned glass. Brush the scones with the remaining milk and a sprinkle of sugar. Place the circles on a floured baking tray.
- Bake in the pre-heated oven for ten minutes. Once baked, leave to cool on a wire rack.
