Fall-off-the-bone chicken drums

This recipe works just as well with chicken wings, chicken thighs or whole legs.

Ingredients

  • 1 teaspoon sea salt
  • 1 teaspoon sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon freshly cracked black pepper
  • 12 bone-in skin-on chicken drumsticks
  • Barbecue sauce

Directions

  1. Preheat the oven to 300°F. Line sheet pan with parchment paper.
  2. In a bowl, stir together salt, sugar, smoked paprika, granulated garlic and pepper. Sprinkle over chicken and rub to coat. Arrange chicken on a prepared sheet pan. Bake until skin is browned and dried and chicken is fork-tender, about two hours.
  3. Grill Finish: Brush chicken with preferred BBQ sauce and transfer to greased grill on medium heat. Cook, flipping once, until charred, about three minutes per side.
  4. Oven finishes: Increase oven temperature to 400F. Brush chicken with preferred BBQ sauce and return to oven. Bake until sauce is caramelized, about six to eight minutes.
  5. Serve and enjoy!
