3 large eggs

1 tablespoon (15 milliliters) unsalted butter

Directions
- Crack three eggs into a medium bowl. Whisk eggs until whites and yolks are combined.
- Melt butter in a non-stick pan over low heat. Swirl the butter around the pan and up the sides to coat the pan.
- Add eggs to the pan and cook over low heat. Move the center of the eggs in the pan with a rubber spatula .Cook until the sides of the omelette are set and the center is still slightly runny.
- Fold omelette on one side into the center. Fold the opposite side to the center. Flip onto plate, with the seam on the bottom.
- Garnish with a crack of black pepper and chives.
