Ingredients
6 cups finely chopped kale
2 tablespoons white wine vinegar
3 tablespoons olive oil
Salt and freshly cracked black pepper
1 cup cooked long grain and wild rice
1 apple, diced
1/2 cup halved grapes
1/4 cup dried cherries
1/4 cup chopped almonds
Directions
In a large bowl, massage the kale with the vinegar, oil and salt and pepper to taste. Transfer the kale to a serving dish and top with the rice, apple, grapes, cherries and almonds.
