Green goddess sandwiches

This Green Goddess Sandwich is a bit of a sophisticated take on a traditional cucumber and cream cheese sandwich. It’s loaded with tangy goat cheese, creamy avocado, crunchy cucumber, and lots of fresh herbs. It’s perfect for vegetarians and can be served on really any kind of bread you have at home. I love it on fresh sourdough which seems to be the new North American obsession.

Ingredients

  • 1/4 cup crumbled goat cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon chopped fresh chives
  • 1 avocado
  • 1/2 lemon juice
  • 1/4 English cucumber, thinly sliced
  • 1/2 cup arugula
  • 1/4 cup broccoli sprouts
  • 4 slices sourdough bread

Directions

  1. In a small bowl, mash the avocado. Mix in the parsley, basil, chives, and lemon juice. Season the mashed avocado with salt and pepper to taste.
  2. Spread the mixture over two slices of the bread. Add a layer of the sliced cucumbers, goat cheese, arugula, and sprouts. Top with the remaining slices of bread.
  3. Serve immediately.
