Grilled beets citrus salad with green goddess dressing

Ingredients

  • Dozen assorted baby beets
  • 1 bunch thyme
  • Sea salt
  • Black pepper
  • Olive oil
  • 3 bay leafs
  • 1 cup red wine vinegar

Green goddess dressing:

  • 1 cup full fat yogurt
  • 1/4 cup dill
  • 1/4 tarragon
  • 1/4 mint
  • 1/4 cilantro
  • 1/4 teaspoon garlic
  • Lemon zest

Directions

Salad:

  1. Combine all ingredients together. Place onto aluminum foil. Wrap beets and all the ingredients. Place beets into a pre-heated oven, 350 degrees. Roast for one hour or until beets are tender. Cool beets and peel. Leave beets whole.

Green goddess dressing:

  1. Blend all together.

To plate:

  1. Place a generous amount of the dressing onto a place.
  2. Place your cooked beets and orange segments onto dressing. Randomly add the walnuts and finish with olive oil and sea salt.
