Grilled radicchio and fennel salad with strawberry and almond
Ingredients
- 1 head radicchio, quartered
- 1 fennel bulb, finely sliced
- 2 cups arugula
- 2 cups strawberries, sliced
- 1 cup almonds, slivered
White balsamic dressing:
- 1/4 cup white balsamic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup + 1 tablespoon olive oil
Directions
- Drizzle olive oil on radicchio and fennel. Grill on medium high until slightly charred and softened. Reserve.
- Whisk together ingredients to make dressing.
- Place radicchio, fennel, arugula, and strawberries in a large bowl, then drizzle the dressing around the perimeter of the bowl. Toss gently and season with salt and pepper. Top with almonds and enjoy!
