Grilled radicchio and fennel salad with strawberry and almond

  • 1 head radicchio, quartered
  • 1 fennel bulb, finely sliced
  • 2 cups arugula
  • 2 cups strawberries, sliced
  • 1 cup almonds, slivered

White balsamic dressing:

  • 1/4 cup white balsamic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup + 1 tablespoon olive oil


  1. Drizzle olive oil on radicchio and fennel. Grill on medium high until slightly charred and softened. Reserve.
  2. Whisk together ingredients to make dressing.
  3. Place radicchio, fennel, arugula, and strawberries in a large bowl, then drizzle the dressing around the perimeter of the bowl. Toss gently and season with salt and pepper. Top with almonds and enjoy!
