Honey balsamic kale salad

A beautiful salad to pair with any main. 



  • 1/2 cup balsamic vinegar
  • Salt, for seasoning
  • 1/2 cup honey
  • Butter, to cook
  • 1 cup of candied pecans
  • 2 tablespoons brown sugar
  • 1 tablespoon maple syrup
  • 4 cups of baby kale
  • 1 cup of diced green apples
  • 1 cup cranberries
  • 1/4 cup crumbled feta


  1. In a large bowl add balsamic and salt.  Slowly pour honey into the bowl while mixing with a whisk at the same time.
  2. Turn on a small frying pan to medium to low heat. When the pan is hot add butter and melt. Once butter is melted add pecans, sugar and maple syrup and gently stir for about five minutes. When pecans are coated and toasted, remove them from heat.
  3. In a separate bowl add kale, apples and cranberries. Pour in one-eighth of a cup of your balsamic honey dressing and mix. Feel free to add more dressing if desired. 
  4. Place salad on a plate and then top with more pecans apples and feta cheese. Enjoy!
