Leftover rotisserie chicken tacos

Use your leftover chicken to create the ultimate at-home tacos. 



  • 4 corn or flour tortillas
  • 2 tablespoons olive oil
  • 1 1/2 cups rotisserie chicken or any other kind of cooked chicken
  • 2 avocados
  • 1/2 cup salsa
  • 1/4 cup feta or cotija cheese
  • 1 lime, quartered


  1. In a dry pan over medium-high heat, burnish tortillas by toasting them for about one minute per side. Reserve. 
  2. After the last tortilla is cooked, add oil to the pan along with the chicken.
  3. Cook for about five minutes until the chicken begins to brown.
  4. To assemble a taco, mash half an avocado over each half tortilla. 
  5. Top with chicken and spoon salsa overtop. Finish with a crumble of cheese and serve with a lime wedge. Enjoy!
