Mexican style street corn

Ingredients
- 4 cobs of corn, husked and halved
- 3 tablespoons mayonnaise
- 1/4 cup cotija or feta cheese
- 1/4 cup cilantro, finely chopped
- 1 teaspoon smoked paprika
- 1 garlic clove, smashed
- 1 watermelon wedge
Directions
- Skewer corn through cut end with bamboo skewers.
- Bring a large pot of water to a boil and boil corn (with the skewers) for five minutes.
- In a medium bowl, mix cheese, cilantro, paprika and garlic.
- Remove corn from water, let drip dry, then brush with mayo/cheese mixture.
- Set corn in a watermelon wedge. Serve and enjoy!
