Mexican style street corn

Bring the Mexican flavours to your next backyard bash. 


  • 4 cobs of corn, husked and halved
  • 3 tablespoons mayonnaise
  • 1/4 cup cotija or feta cheese
  • 1/4 cup cilantro, finely chopped
  • 1 teaspoon smoked paprika
  • 1 garlic clove, smashed
  • 1 watermelon wedge


  1. Skewer corn through cut end with bamboo skewers. 
  2. Bring a large pot of water to a boil and boil corn (with the skewers) for five minutes.
  3. In a medium bowl, mix cheese, cilantro, paprika and garlic. 
  4. Remove corn from water, let drip dry, then brush with mayo/cheese mixture.
  5. Set corn in a watermelon wedge. Serve and enjoy!
