Ingredients
4 cobs of corn, husked and halved
3 tablespoons mayonnaise
1/4 cup cotija or feta cheese
1/4 cup cilantro, finely chopped
1 teaspoon smoked paprika
1 garlic clove, smashed
1 watermelon wedge
Directions
Skewer corn through cut end with bamboo skewers.
Bring a large pot of water to a boil and boil corn (with the skewers) for five minutes.
In a medium bowl, mix cheese, cilantro, paprika and garlic.
Remove corn from water, let drip dry, then brush with mayo/cheese mixture.
Set corn in a watermelon wedge. Serve and
enjoy!
