Arroz Verde- Green Rice

Arroz Verde is a vibrant Mexican side dish that's easy to make and infused with earthy, herby flavours!

Ingredients

  • 1 cup tightly packed fresh cilantro sprigs
  • 1 cup tightly packed fresh stemmed spinach leaves
  • 1 1/4 cups chicken stock
  • 1 1/4 cups milk
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/4 cup of finely minced onion
  • 1 clove garlic, minced
  • 1 1/2 cups of long-grain rice

Directions

  1. Add the cilantro, spinach and stock to a blender and blend until everything is pureed. Add the milk and salt and blend a bit more until well combined.
  2. Place a medium pot over medium heat. Add the butter and oil. Once the butter has melted, add the onions garlic, and sweat for four minutes until soft and translucent. Stir in the rice and cook for another two minutes to toast the rice lightly.
  3. Pour the cilantro-spinach liquid into the rice and stir well.
  4. Turn the heat to medium-high and cook uncovered while stirring until a simmer.  Cover with a lid and turn the heat to low. Cook for 18 minutes, stirring once halfway through to ensure the rice isn't sticking to the bottom. 
  5. Turn off the heat and use a fork to fluff the rice.  Cover again and let the rice rest for five to 10 minutes before serving. Enjoy!
