Ingredients
Mushroom Gravy
1/4 cup + 1 tablespoon unsalted butter, divided
1 small yellow onion, peeled and thinly sliced
200g mixed wild mushrooms, chopped
4 tablespoons all-purpose flour
2 cups beef stock
Kosher salt and cracked black pepper, to season
Assembly
750g bag of frozen French fries
250g Montreal smoked meat, roughly chopped
2 cups shredded mozzarella or cheese curds
Chopped fresh herbs for garnish
Directions
Bake the fries using the instructions on the bag.
Mushroom Gravy
Melt one-quarter cup of butter in a medium-sized saucepan over medium-high heat. Once melted, add onions and sauté for three minutes.
Add mushrooms and continue to sauté for four minutes—season with salt and pepper.
Once the mushrooms and onions have cooked down add the remaining one tablespoon of butter and stir until melted.
Sprinkle the mixture with flour and stir until the flour has been absorbed into the mushroom mixture.
Slowly pour in the beef stock and whisk until combined. Lower the heat to low and let the gravy simmer until the fries are ready.
Once the fries are ready, remove them from the oven, but do not turn the oven off.
Assemble and Serve
Transfer the fries to an oven-proof dish and scatter them with smoked meat and cheese. Place the dish into the oven to melt the cheese for about three to five minutes, depending on what temperature your oven is at; keep an eye on them!
Remove from the oven and pour a generous amount of gravy over the top. Garnish with herbs, and enjoy!
