Lower calorie jalapeno poppers

The ideal finger food snack for an appetizer, party dish or game day snack.

Ingredients
- 8 ounces low fat cream cheese
- 2/3 cup aged really good quality sharp Cheddar cheese
- ¼ teaspoon cumin
- ¼ teaspoon smoked sweet paprika
- Salt and pepper, to taste
- 8 jalapenos, halved and seeds and ribs removed
- 2/3 cup whole wheat panko
- Olive oil in an oil atomizer
Directions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with a silpat or parchment paper.
- In a medium bowl, mash together the cream cheese, shredded cheese, cumin, paprika, and salt and pepper to taste. Pack into the jalapenos and sprinkle liberally with panko.
- Spoon the filling into each jalapeño cavity. Then top each jalapeno with a spoonful of the panko. Place on prepared baking sheet and give it a spritz with a little olive oil. Bake until crispy, about 15-20 minutes.
