Ingredients

4 ripe avocados

6-8 medium tomatillos

1-2 peeled cloves of garlic

1/4 - 1/2 jalapeno or serrano pepper, stems removed (or to taste)

1-2 limes juiced (or to taste)

1 teaspoon of salt (or to taste)

1/2 white onion finely chopped

Handful of cilantro leaves coarsely chopped, stems removed

1 large tomato, seeds removed, chopped into small squares
Directions
- Using a spoon, scoop out avocado flesh in a serving bowl and set aside.
- In a blender, blend the tomatillos, garlic cloves, jalapeno (if using), 1 lime juice and 1 teaspoon of salt.
- Using a fork, gently mash the avocado flesh and the tomatillo mixture together.
- Stir in the chopped white onion, cilantro and tomato.
- Season with lime juice and salt to taste.
- NOTE: leave a couple of avocado pits in the guacamole to make it last longer!
