Ingredients
DIY pumpkin spice mix:

3 tablespoons ground cinnamon

2 teaspoons ground ginger

2 teaspoons ground nutmeg

1 teaspoon ground allspice

1 teaspoon ground cloves
Pumpkin balls:

2 cups oats, ground to a fine powder (or 1 3/4 cups oat flour)

1/4 cup coconut flour
-
2 tablespoon brown sugar (or coconut sugar)

1 tablespoon pumpkin pie spice mix

1-1/2 cup pumpkin puree

1 teaspoon vanilla extract

1/4 cup almond butter
-
2 tablespoons maple syrup

Cinnamon and sugar for rolling
Directions
DIY pumpkin spice mix:
- Combine all and store in airtight container until ready to use.
Pumpkin balls:
- Combine the coconut flour, oat flour, sugar, and pumpkin pie spice in a mixing bowl.
- In a small sauce pan over medium heat, combine the almond butter and the maple syrup. Heat until smooth. Remove from heat and stir in the vanilla.
- Add the almond butter mixture to the dry ingredients along with the pumpkin. Mix well.
- Roll into one to 1-1/2 inch balls and roll in cinnamon and sugar. Place on cookie sheet and freeze. Serve cold or at room temperature.
