Pumpkin balls

Ingredients

DIY pumpkin spice mix:

  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves

Pumpkin balls:

  • 2 cups oats, ground to a fine powder (or 1 3/4 cups oat flour)
  • 1/4 cup coconut flour
  • 2 tablespoon brown sugar (or coconut sugar)
  • 1 tablespoon pumpkin pie spice mix
  • 1-1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • Cinnamon and sugar for rolling

Directions

DIY pumpkin spice mix:

  1. Combine all and store in airtight container until ready to use.

Pumpkin balls:

  1. Combine the coconut flour, oat flour, sugar, and pumpkin pie spice in a mixing bowl.
  2. In a small sauce pan over medium heat, combine the almond butter and the maple syrup. Heat until smooth. Remove from heat and stir in the vanilla.
  3. Add the almond butter mixture to the dry ingredients along with the pumpkin. Mix well.
  4. Roll into one to 1-1/2 inch balls and roll in cinnamon and sugar. Place on cookie sheet and freeze.  Serve cold or at room temperature.
