Reverse-marinated turkey burgers

These burgers are scrumptious on a fresh crusty bun with crisp toppings, a lettuce wrap, or even over rice or a baked potato! They’re light, zesty and perfect for enjoying on the deck on a hot summer evening. A reverse marinade is exactly what it sounds like - it’s a marinade that you place the meat into after the cooking process. The purpose of a reverse marinade is to lock even more flavour and juiciness into whatever is placed in it! 



Reverse Marinade

  • 1 medium-sized red onion, finely sliced
  • 1/4 cup (60ml) fresh parsley, finely chopped
  • 1/3 cup (80ml) lemon juice
  • 1/3 cup (80ml) olive oil
  • 2 tablespoons (30ml) white balsamic vinegar
  • 1 teaspoon (5ml) dijon mustard
  • 1 teaspoon (5ml) maple syrup

Turkey Burgers

  • 454g minced turkey
  • 1/2 cup (125ml) seasoned breadcrumbs
  • 1/4 cup (60ml) feta cheese
  • 1/4 cup (60ml) roasted red peppers, finely chopped
  • 3-4 cloves garlic, finely minced
  • 1/2 teaspoon (2.5ml) salt
  • 1/2 teaspoon (2.5ml) oregano
  • 1/2 teaspoon (2.5ml) smoked paprika
  • 1/2 teaspoon (2.5ml) onion powder


  • Fresh buns, sliced avocado, lettuce, tomato (optional)


  1. Preheat grill to 450° F.

Reverse Marinade

  1. In a large shallow pan, combine red onion, parsley, lemon juice, olive oil, white balsamic vinegar, dijon mustard and maple syrup. Set aside. 

Turkey Burgers

  1. Lightly mix minced turkey, breadcrumbs, feta cheese, roasted red peppers, garlic, salt, oregano, smoked paprika and onion powder. Form into four equal patties.
  2. Grill over direct heat for seven to eight minutes per side, until an internal temperature of 165° F is reached.
  3. Remove from grill and immediately place in the pan with the reverse marinade. Lightly cover, and allow to marinate for 10 minutes before serving. 


  1. Use your favourite burger bun or lettuce wraps to wrap your burger to serve. Add toppings like avocado, tomato and lettuce. Enjoy!
