Sesame soba buckwheat noodles

Ingredients
Soba Buckwheat Noodles
- 1 x 8 ounce (227 g) package buckwheat soba pasta
Soy Sauce Dressing
- 1/3 cup soy sauce
- 2 tablespoons rice vinegar
- 3 tablespoons sesame oil
- 1 tablespoon sugar
Garnish
- 1 stalk green onions, thinly sliced
- 1 tablespoon white sesame seeds, toasted
- 1 tablespoon black sesame seeds, toasted
Directions
Soba Buckwheat Noodles
- Cook soba noodles according to package. Or, bring a large pot of water to boil. Add soba noodles and cook for four to seven minutes depending on package directions or desired texture.
- Drain noodles and rinse under cold water. Place in a serving bowl and set aside.
Soy Sauce Dressing
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil and sugar. Set aside for serving.
Serve
- Pour soy sauce dressing over noodles and toss.
- Add green onions and toasted sesame seeds. Toss gently to combine.
- Enjoy as a side dish or add your favourite protein and veggies to make this a meal.
