The strawberry and the shrub
Ingredients
Strawberry shrub:
- 2 1/2 cups of strawberries (hulled and quartered)
- 1 cup of granulated sugar
- 1 1/2 cups apple cider vinegar
Cocktail:
- 1 part Strawberry Shrub
- 1 part aperol
- 4 parts Saison beer
- 1 strawberry (sliced)
Directions
Strawberry shrub:
- Grab a mason jar and add your strawberries and sugar. Tighten the lid, give this a shake and place it into the fridge for two hours.
- Add vinegar and cover. Keep this in the fridge for two days.
- Strain the strawberries through a fine mesh strainer.
- Pour the shrub into a new sterile mason jar. Close lid and store it in the fridge. This can be stored for months on end, just make sure your mason jar is sterile.
Cocktail:
- Layer your pilsner glass with ice and your sliced strawberries.
- Add the aperol and strawberry-infused shrub, and top it up with the Saison beer. Stir before drinking.
