Grab a mason jar and add your strawberries and sugar. Tighten the lid, give this a shake and place it into the fridge for two hours.
Add vinegar and cover. Keep this in the fridge for two days.
Strain the strawberries through a fine mesh strainer.
Pour the shrub into a new sterile mason jar. Close lid and store it in the fridge. This can be stored for months on end, just make sure your mason jar is sterile.
Cocktail:
Layer your pilsner glass with ice and your sliced strawberries.
Add the aperol and strawberry-infused shrub, and top it up with the Saison beer. Stir before drinking.
