Tomato tartare

An innovative combination of finely chopped canned tomatoes and Calabrian chilli, this tomato tartare makes a beautiful and delicious first course or appetizer. 



  • 1 cup, Roma tomatoes (4-5pc), minced, no guts
  • 1/2 tablespoon Calabrian chilli from jar, minced
  • 1.5 tablespoons shallot, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, crushed
  • 1 pinch granulated sugar
  • 2 tablespoons olive oil
  • Parmesan chips, to serve


  1. In a small mixing bowl, combine minced Roma tomatoes, Calabrian chilli, shallots, kosher salt, black pepper, granulated sugar and olive oil and mix thoroughly. 
  2. Place in a serving bowl and garnish with chives. 
  3.  Serve with parmesan chips on the side.
