Tomato tartare

An innovative combination of finely chopped canned tomatoes and Calabrian chilli, this tomato tartare makes a beautiful and delicious first course or appetizer.

Ingredients
- 1 cup, Roma tomatoes (4-5pc), minced, no guts
- 1/2 tablespoon Calabrian chilli from jar, minced
- 1.5 tablespoons shallot, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, crushed
- 1 pinch granulated sugar
- 2 tablespoons olive oil
- Parmesan chips, to serve
Directions
- In a small mixing bowl, combine minced Roma tomatoes, Calabrian chilli, shallots, kosher salt, black pepper, granulated sugar and olive oil and mix thoroughly.
- Place in a serving bowl and garnish with chives.
- Serve with parmesan chips on the side.
