Ingredients

1 bottle of red wine

1 lemon

1 orange

1 apple

3 cloves

1 long cinnamon stick, broken into 4 pieces

1 vanilla bean

Thumb size ginger root

3 star anise

1/2 teaspoon peppercorns

1 bay leaf

1 cup of sugar
Directions
- Peel the zest off the orange and lemon after washing well.
- Wash the apple and cut into thin slices.
- Pour the red wine in a saucepan and add the cinnamon sticks, sugar, cloves, apple, orange and lemon zest and nutmeg.
- Stir all together then bring to boil and simmer for five minutes to dissolve the sugar. Then, repeat for another five minutes on a very low heat to infuse the flavours.
- Pour into heatproof glasses add a little of all the flavours to dress glass.
