Vin brulé (mulled wine)

Ingredients

  • 1 bottle of red wine
  • 1 lemon
  • 1 orange
  • 1 apple
  • 3 cloves
  • 1 long cinnamon stick, broken into 4 pieces
  • 1 vanilla bean
  • Thumb size ginger root
  • 3 star anise
  • 1/2 teaspoon peppercorns
  • 1 bay leaf
  • 1 cup of sugar

Directions

  1. Peel the zest off the orange and lemon after washing well.
  2. Wash the apple and cut into thin slices.
  3. Pour the red wine in a saucepan and add the cinnamon sticks, sugar, cloves, apple, orange and lemon zest and nutmeg.
  4. Stir all together then bring to boil and simmer for five minutes to dissolve the sugar. Then, repeat for another five minutes on a very low heat to infuse the flavours.
  5. Pour into heatproof glasses add a little of all the flavours to dress glass.
