Watermelon roasted shallot salad


  • 4 cups watermelon, cut into chunks
  • 3 ripe plum tomatoes, cut into wedges
  • 5 tablespoons olive oil
  • 3 tablespoons white balsamic vinegar
  • 1 bunch mint, torn into pieces
  • 6 cups arugula
  • 1 cup crumbled feta cheese
  • 3 medium sized shallots, roasted, sliced thinly
  • 1 bunch green onion, cut into circles
  • Salt
  • Pepper


  1. Start by roasting the shallots, peeled, in the oven for 25 minutes at 350 until soft and have some colour on them.
  2. While the shallots are roasting, cut and prep all vegetables.
  3. In a bowl toss together everything except feta and green onion.
  4. When ready to plate, top the salad with crumbled feta and green onion.
