Watermelon roasted shallot salad
Ingredients
- 4 cups watermelon, cut into chunks
- 3 ripe plum tomatoes, cut into wedges
- 5 tablespoons olive oil
- 3 tablespoons white balsamic vinegar
- 1 bunch mint, torn into pieces
- 6 cups arugula
- 1 cup crumbled feta cheese
- 3 medium sized shallots, roasted, sliced thinly
- 1 bunch green onion, cut into circles
- Salt
- Pepper
Directions
- Start by roasting the shallots, peeled, in the oven for 25 minutes at 350 until soft and have some colour on them.
- While the shallots are roasting, cut and prep all vegetables.
- In a bowl toss together everything except feta and green onion.
- When ready to plate, top the salad with crumbled feta and green onion.
