Watermelon sugar cocktail

This juicy watermelon sugar cocktail is the summer sip you've been waiting for. With the refreshing flavours of watermelon and lime and a kick of jalapeno, this drink can be made as sweet or as spicy as you want it to be!

Ingredients

Watermelon Sugar Cocktail

  • Half of a fresh watermelon
  • 5 limes
  • 3 tablespoons white sugar
  • 4.5 oz rum
  • 6 oz sparking water
  • 2 jalapenos

Directions

Prepare the day before serving:

  1. One day before serving: cut a slice of watermelon, remove the rind and cut it into 1/2-inch cubes. Put the cubes on a plate or small baking sheet and into the freezer overnight.

To serve:

  1. Juice the rest of the watermelon. Slice some of the jalapeno and leave them in the watermelon juice (can also be done overnight). Keep some of the jalapeno to slice onto the cocktail and use as garnish.
  2. Juice 3-4 of the limes and set aside. Slice the fifth lime into rings or wedges to use in the cocktail and as garnish.
  3. Mix three spoonfuls of sugar into the lime juice, or more or less depending if you like a sweet or non-sweet cocktail. Let sit and make sure the sugar has disolved before pouring.
  4. Combine the sugary lime juice with three shots of rum, shake and pour into two glasses over some of your frozen watermelon cubes. Mix in roughly two shots of watermelon juice into each glass, and then top with sparkling water. Stir, garnish with lime and jalepeno slices and enjoy!
