Sheet Pan Turkey Parmesan

Ingredients

  • 680g ground turkey
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 2 eggs, beaten
  • Flour for dusting
  • 1 ½ cup seasoned Italian bread crumbs
  • Olive oil (either in a spray bottle or just in a bottle)
  • 2 ½ cups marinara (more if you want it saucier)
  • 2 cups grated mozzarella cheese
  • Chopped basil for garnish

Directions

For this recipe you need 2 large rimmed baking sheets (11x17-inches). Flip one baking sheet over, so that the bottom is facing upwards. Cover it with parchment paper.

  1. Preheat the oven to 400°F
  2. Add the turkey, Italian seasoning, garlic powder, onion powder and salt to a bowl. Mix well to combine.
  3. Add about ¼ cup of flour to the parchment paper lined, upside down baking sheet. Place the turkey mixture on top of the flour. Sprinkle the top of the turkey with a little more flour and ensure your hands are well floured. Gently press the turkey out into one flat “cutlet, about a ¼-inch thick. Add a little more flour as needed so it doesn’t stick to your hands. . The turkey should almost reach the perimeter of the baking sheet and have a thin coating of flour over the top.
  4. Brush the top of the turkey with the egg wash.
  5. Scatter half of the breadcrumbs evenly over the egg wash. Press them down slightly so they stick to the egg. Drizzle (or spray) the surface of the breadcrumbs generously with olive oil.
  6. Invert the second sheet pan over the turkey cutlet. Pick up both sheet pans and flip them over so that the turkey cutlet falls into the bottom baking sheet. Remove the top sheet pan and peel away the parchment paper.
  7. Brush the top of the floured turkey with egg wash (like you did on the first side). Scatter over the remaining breadcrumbs. Using more if needed to cover the cutlet. Drizzle or spray with more olive oil.
  8. Bake in the oven for 18-20 minutes or until the turkey is golden brown and cooked through. Remove from the oven.
  9. Dollop the marinara sauce over the cutlet and spread out evenly. Top with the grated mozzarella.
  10. Broil on low for 5-8 minutes until the cheese is brown and melted.
