The Onion Soup Burger

Makes 4 Burgers

Ingredients

Onions

  • 2 tbsp butter
  • 1 sprig fresh thyme
  • 2 large Spanish onions, thinly sliced
  • 1/4 cup dry white wine (a $10-$12 bottle that I may add will be the drink for the parents for this dinner included in the 40$ budget!!!)
  • 1/2 cup chicken stock
  • 1 tsp brown sugar
  • Salt and pepper

tricks to quick onions: super thinly sliced, large wide pan, add some brown sugar at the end for more color!

Burger

  • 500-600g lean ground beef
  • 2 tbsp Worcestershire sauce
  • 1 tbsp garlic powder
  • 2 tbsp onion powder
  • 1/2 cup crispy onions
  • 1 tsp salt
  • 2 tsp ground pepper

Assembly

  • 4 slices of Gruyere cheese
  • 4 brioche buns
  • 4 tbsp mayo

Directions

For the onions:

  1. In a sauté pan warm the butter and thyme on medium heat, add the onions and slowly caramelize for about 15 minutes or until they are golden brown.
  2. Deglaze the pan with white wine and chicken stock, add the brown sugar and cook until the liquid has completely evaporated. Salt and pepper to taste. Set aside.

For the burger:

  1. In a bowl, place the ground beef, Worcestershire sauce, garlic and onion powder, crispy onions, salt and pepper. Combine until all the ingredients are mixed well into the meat, without overmixing. Divide the meat into 4 parts and form your burgers. Using your fingers create a well in the centre of the burger so the middle is thinner than the edges for more even cooking.
  2. Preheat a cast iron skillet.
  3. Sear the burgers about 5-6 minutes per side. Once the burgers are flipped and have cooked about 5 minutes top with Gruyere cheese, and tent with aluminum foil. Turn off the heat and allow the meat to rest while the cheese continues to melt for about 5 minutes to allow them to finish cooking through.

Assembly:

  1. Build your burger by layering the bun, mayonnaise, burger with melted cheese, caramelized onions and finally the top of the burger bun.
