Afrim’s Buffalo cauliflower dip

This is a great spin on Buffalo chicken wings. It's cheesy, warm and the perfect comfort food while watching the game with friends and family.

- Heat oven to 375° F.
- In a large cast iron skillet, (ovenproof) toss the cauliflower in olive oil, salt, and pepper.
- Cover with a lid or foil and cook on the stovetop over high heat to steam for five minutes.
- Uncover the skillet and cook, stirring until the cauliflower is softened and caramelized, about 10 minutes.
- Stir in butter. Once melted, stir in hot sauce and simmer until the sauce has reduced about three minutes.
- Turn off the heat, then stir in the cream cheese and sour cream until combined.
- Sprinkle the aged cheddar and gruyere cheeses on top.
- Bake until bubbling around the edges and the cheeses have melted about eight to 10 minutes.
- Run under the broiler for one to two minutes so the top gets Browned and golden
- Take out of the oven and sprinkle with blue cheese and green onions.
- Serve with vegetables, toasted baguette, and tortilla chips. Enjoy!
