Afrim’s Buffalo cauliflower dip

This is a great spin on Buffalo chicken wings. It's cheesy, warm and the perfect comfort food while watching the game with friends and family.

Ingredients

  • 1 head of cauliflower, cored and cut into small florets
  • 1 tablespoon olive oil
  • 2 tablespoons salted butter
  • 1/2 cup buffalo-style hot sauce
  • 1/2 cup softened cup good quality cream cheese
  • 1/4 cup sour cream
  • 1/4 cup grated swiss gruyere
  • 1/4 cup grated aged white cheddar
  • 1/4 cup crumbled good quality blue cheese
  • A small handful of finely chopped green onions
  • Salt and pepper
  • Celery stick, carrot sticks, toasted baguette, tortilla chips for dipping

Directions

  1. Heat oven to 375° F.
  2. In a large cast iron skillet, (ovenproof) toss the cauliflower in olive oil, salt, and pepper.
  3. Cover with a lid or foil and cook on the stovetop over high heat to steam for five minutes.
  4. Uncover the skillet and cook, stirring until the cauliflower is softened and caramelized, about 10 minutes.
  5. Stir in butter. Once melted, stir in hot sauce and simmer until the sauce has reduced about three minutes.
  6. Turn off the heat, then stir in the cream cheese and sour cream until combined.
  7. Sprinkle the aged cheddar and gruyere cheeses on top.
  8. Bake until bubbling around the edges and the cheeses have melted about eight to 10 minutes.
  9. Run under the broiler for one to two minutes so the top gets Browned and golden
  10. Take out of the oven and sprinkle with blue cheese and green onions.
  11. Serve with vegetables, toasted baguette, and tortilla chips. Enjoy!
