Ingredients
2 tablespoons olive oil
1 cup finely sliced scallions (green part only)
1/2 cup warm water
1/2 tablespoon instant yeast
1/2 tablespoon white sugar
3 cups all purpose flour
1/2 tablespoon salt
1 tablespoon plain yogurt
1/2 cup milk
1/4 cup chopped fresh garlic
1/4 cup melted salted butter
Chopped coriander, for garnish
Directions
To a frying pan on medium heat, add olive oil and scallions—Saute for 30 to 45 seconds or until softened and fragrant. Transfer to a plate and allow to cool completely.
To a small bowl, add water, instant yeast and sugar. Stir and let it sit for five minutes. The mixture should be bubbly and puffy. If not, discard, purchase new yeast and start the recipe again.
Add the flour and salt to a large bowl and mix well to combine. Add in the sauteed scallions and mix well to distribute.
Add yogurt and milk, and mix until a shaggy ball of dough forms. Transfer the dough to the counter and knead until a supple soft ball of dough forms.
Place the dough ball back in the bowl, cover with plastic wrap, and rest in a warm place for one and a half hours or until double in volume.
Preheat oven to 500° F.
Divide the dough into five equal pieces. Stretch dough into a long oval shape, using your hands/rolling pin and a little extra bench flour if necessary.
Scatter three-quarters of a tablespoon of garlic over the surface of the naan and gently press it in by rolling it over with a rolling pin.
Place the naan garlic side up on a baking sheet. Bake for five to six minutes or until the bottom has slightly browned. Then flip over and bake for three to four minutes to brown the other side.
Remove from the oven and brush with plenty of melted butter. Garnish with fresh chopped coriander. Enjoy!
