The black smoke sour cocktail

Whiskey and Guinness are both St. Patrick’s Day classics, and this cocktail combines the two. Irish whiskey comes in many forms, and something small batch gives it a lovely luscious texture in this unusual serve with a Guinness reduction.

Guinness Reduction

  • 1 can of Guinness
  • 250 grams sugar

  • 1 oz whiskey
  • 0.5 oz amaro averna
  • 0.05 oz Guinness reduction
  • 0.75 oz lemon juice
  • 3 drops vegan foamer

Guinness Reduction

  1. Add one 473ml can of Guinness into a small pan. Cook on medium-low and let reduce by volume to about half. Add 250g sugar and stir until all dissolved. Let cool and use.

  1. Add whiskey, amaro averna, Guinness reduction, lemon juice, and foamer into a cocktail shaker and shake without ice to froth up the foaming agent.
  2. Add ice then shake vigorously for 10 to 15 seconds and strain into a rocks glass.
  3. Fill with fresh ice, no garnish is needed. Enjoy!
