Shark attack (Strawberry Irish shark lemonade)

Butterfly pea flower tea offers a natural and enchanting transformation to this cocktail, infusing it with a brilliant blue hue. The magic happens when you introduce varying pH levels, such as through ingredients like acid, lemon, tonic water, or pineapple juice, causing the colour to shift right before your very eyes.

Ingredients
- 1 butterfly pea flower tea bag
- 1 oz honey syrup
- 2 strawberries
- 1 oz whiskey
- 0.25 oz Campari
- 1 oz lemon juice
Directions
- Before preparing this cocktail, prep your ice at least six hours before.
- Boil one litre of water and steep one Butterfly Pea Flower Tea Bag. Allow it to steep for only two minutes max. Remove the tea bag and pour the mix into your shark moulds.
- Stir together two parts of honey with one part of boiled water. You want to make the honey more fluid to easily incorporate into your cocktail.
- In a shaker, muddle two strawberries.
- Add whiskey, Campari, lemon juice, and honey syrup and add in the rest of your ingredients. Strain over your blue shark ice mould (allow pieces of strawberries to come through) into an old-fashioned glass. Serve and enjoy!
