Beet it black bean salsa

Whole beets bought with those long dark greens can last you a couple of months. Buying with the greens gives you a bigger bang for your buck since beet greens are delicious, so you get more meals.

Ingredients

  • 1 raw beet, peeled and grated (about 1 cup)
  • 1/2 red onion, finely chopped (about 1/4 cup)
  • 2 cloves garlic, finely chopped
  • 1 cup chopped tomatoes, fresh or canned
  • Zest and juice of half a lime
  • 1 14 oz black beans, drained and rinsed
  • 2 tablespoons chopped cilantro, basil, parsley or mint
  • 1 jalapeno, ribs and seeds removed, finely diced
  • Salt and black pepper
  • 1/2 cup corn kernels
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped tomatillos
  • 1/4 cup diced mangoes or peaches
  • 1 avocado, chopped

Directions

  1.  In a medium-sized bowl, combine beets, red onion, garlic, tomatoes, lime juice and zest, black beans, cilantro, jalapeno, salt, black pepper, corn kernels, bell peppers, tomatillos, mangos, peaches, and avocado. Toss to coat.
  2. Taste and adjust the seasoning. Serve and enjoy!
