Sweet Potato and Honey Carrot Old Fashioned

Carrots and other root veggies like squash or pumpkin go well with this pairing because they’re vegetables that have and complement some sweet components. Think about it. Sweet Potatoes are naturally sweet. Carrots go great with a Honey or Maple Glaze. Pumpkins thrive when cooked with sugar and all the holiday spices. So why does it work with an Old Fashioned? Because, like almost every cocktail, you need some form of sugar to balance it out.

Ingredients

  • 6 heirloom carrots (varying colours)
  • Olive oil
  • 1 tablespoon butter
  • 1/2 orange, zested and juiced
  • 1 tablespoon honey
  • Pinch of salt
  • 1/2 pound sweet potato, cubed
  • 2 oz bourbon
  • 0.75 oz to 1 oz root vegetable simple syrup
  • 3 dashes hot pepper or chilli bitters

Directions

  1. Preheat the oven to 375 degrees; slice your carrots in half, dress them with oil, and place them on parchment paper. Let it roast for 10 minutes. 
  2. Turn your oven to 375 degrees. Grab a bowl and dress the Sweet Potato in oil with salt, pepper and optional paprika. Place a parchment paper on a baking tray and arrange the Sweet Potato. Let it roast for 35-45 minutes, flipping halfway. 
  3. Meanwhile, in a saucer, add all your remaining ingredients and stir to combine. Let it come to a simmer and lower the temperature to allow it to simmer for 2 minutes. Pour over carrots after the 10-minute mark. Allow the carrots to roast for another 15 minutes until finished cooking.
  4. Technique 1: The method of infusing the Bourbon with the fat from the butter and olive oil is called Fat Washing. It adds a velvety and almost creamy texture to your spirits and is absolutely delicious. Plus, it doesn’t take any effort on your part, just time. You combine them in a mason jar, let it sit at room temperature for 1 hour, and then freeze overnight. Strain through a coffee filter, and voila, you’re done! I did, however, come up with a quick version that can be done the day of. Enjoy!
  5. Technique 2: The quick version blended the carrots and sweet potato with boiled water and brown sugar. Strain and voila, you’re done! Enjoy!
