Black garlic

Ingredients

  • 6 whole (unpeeled garlic bulbs)

EQUIPMENT

  • Rice cooker with a ‘warm’ or ‘hold’ setting

Directions

  1. Remove any dirt from the garlic bulbs by scrubbing the bulbs gently with the rough side of a clean, unused dry sponge.
  2. Set your rice cooker to warm (not low).  
  3. Place garlic bulbs into the cooker, do not overcrowd.
  4. Keep garlic in the rice cooker for a minimum of two weeks or until the cloves are soft and black.
  5. Check the rice cooker occasionally to make sure that it has not switched off.
  6. Store the finished bulbs whole in an airtight container for up to three months.
