Nutty maple ginger granola
Ingredients
- 3 cups old-fashioned oats
- 1/2 cup chopped raw pecans
- 1/2 cup chopped raw cashews
- 1/2 cup unsweetened coconut flakes
- 1/2 cup raw pumpkin seeds
- 1/4 cup chia seeds
- 1/4 cup chopped crystallized ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1/4 teaspoon ground ginger
- 1/3 cup olive oil
- 1/4 cup pure maple syrup
- 3 tablespoons honey
Directions
- Preheat the oven to 300ºF and line a rimmed baking sheet with parchment paper.
- In a large bowl, combine the oats, pecans, cashews, coconut flakes, pumpkin seeds, chia seeds, crystallized ginger, cinnamon, salt, and ground ginger.
- In a small bowl, whisk together the olive oil, maple syrup, and honey. Pour over oat mixture and toss to combine. Spread the granola evenly over the prepared baking sheet. Bake for 18–20 minutes and stir carefully. Continue baking for another 18–20 minutes, until golden. Remove from the oven and let cool completely on the baking sheet. Once cool, break the granola apart and store at room temperature in an airtight container for up to one week.
