Roasted garlic

  • 2 garlic bulbs
  • 1/4 cup (60 ml) olive oil
  • 4 sprigs fresh thyme
  • Salt and pepper
  • Baguette, sliced, grilled


  1. Preheat oven to 350 F (175 C).
  2. Clean any dirt from the outside of the bulbs.
  3. Cut off the top 1/4 of the bulbs.
  4. In a baking dish or cast-iron skillet, place the garlic bulbs cut side facing upwards.
  5. Brush tops of the bulbs generously with olive oil.
  6. Season the garlic bulbs with salt and pepper.
  7. Top the garlic bulbs with sprigs of thyme.
  8. Cover pan with foil or a tight-fitting lid.
  9. Roast in the oven for 30-35 minutes, or until the tops are golden brown, and the cloves are soft and squeeze easily out of the skins.   
  10. Serve warm with baguette.
