Citrus parfaits with mascarpone and ricotta cheese

A quick and easy dessert with rich cheeses and sweet citrus. Incorporate oranges, blood oranges and tangerines for a beautiful array of colours and range of sweet citrus flavour.

Ingredients

  • 12 ounces whole milk ricotta cheese
  • 4 ounces mascarpone cheese
  • ¼ cup heavy cream
  • 6 tablespoons powdered sugar
  • 3 teaspoons vanilla extract
  • 2 cups citrus segments (blood oranges, oranges and tangerine)
  • 2 cups of granola
  • Mint, for garnish

Directions

  1. Mix together the ricotta, mascarpone, cream, powdered sugar, and vanilla well in a medium bowl. Depending on the moisture content of your ricotta, you can adjust the amount of heavy cream to achieve your desired texture.
  2. Place a few pieces of citrus segments in the bottom of your serving glasses. Add about 2 tablespoons of the ricotta cream for the next layer. Repeat with another layer of citrus segments and then ricotta, and then finish off with a few pieces of citrus segments on top. Top with granola.
