Clover club cocktail

Named after Philadelphia’s swinging hot spot of the late 1800’s, the Clover Club cocktail has risen and fallen from fame more times over the century and a half than a movie star gets married.
A striking shade of electric pink, the Clover Club is classically made with gin, egg white, lemon and raspberry, but strawberries are more seductive for Valentine’s Day, so we’re taking license. The egg white works as an emulsifier for the drink and loans a pretty froth to the top. If you’re not into it, you can leave them out, or use aquafaba (the water in a can of chickpeas) for a vegan version.
Ingredients
- 2 ounces gin
- 1 egg white (or aquafaba for vegans)
- 1/2 ounce fresh lemon juice
- 1/2 ounce strawberry syrup*
- Whole strawberries for garnish
Directions
- Pour all ingredients into an empty shaker, and shake vigorously for 20 seconds or so to aerate the egg white. Add in some ice to the mixture, shake again, and strain into a coup and garnish with fresh strawberries.
- *Strawberry syrup: into a sauce pan add 1/2 cup each of sugar, water and strawberries. Bring to a gentle simmer until the sugar dissolves. Mash up the strawberries to infuse the syrup. Remove from heat and allow to steep for 30 minutes or until cool. Strain through affine mesh sieve into a clean container and store in the fridge for up to a week.
