Custom coleslaw
Ingredients
Not-so-creamy coleslaw dressing:
- 1/4 cup oil
- 2 tablespoons vinegar
- 2 teaspoons mustard or Dijon mustard
- 1–2 teaspoons sugar
- 1/2 clove garlic, puréed
- 1/4 teaspoon celery seeds or dill seeds, or a handful of chopped celery tops/leaves
- Salt and pepper, to taste
- 1/4 cup chopped chives or green onions (optional)
- 1–2 tablespoon chopped fresh soft herbs (optional)
Custom coleslaw:
- 8 cups shredded vegetables and/or their stems
Directions
Not-so-creamy coleslaw dressing:
1. In a small bowl, whisk all of the dressing ingredients. Taste and adjust seasoning.
Custom coleslaw:
- In a large bowl, add the shredded produce and other ingredients like duck, cucumber, onions, mint, and nuts.
- Pour the dressing over top and toss well.
- Taste and adjust seasoning with salt and pepper.
