Date puree
Ingredients
- 3 cups (500 grams) dried pitted dates
- 1-2/3 cups (410 milliliters) water
Directions
Microwave method:
- Put the dates and water in a microwave-safe container and cook for four minutes.
Stovetop method:
- In a saucepan, bring the dates and water to a boil and simmer on medium heat until they’re very soft, about eight minutes.
Countertop method:
- If you have the time, put the dates in the water in a bowl and let them soak on the counter top for 24 hours.
Mix everything with a hand blender (zoom, zoom!) or stir vigorously with a wooden spoon until you get a smooth, pureed consistency. You’re looking for a texture like Greek yogurt. If you can stand a spoon in the mixture, it’s perfect. Great job! You’ve now got a delicious date puree!
Tips:
To save time, divide the puree into 1/2 cup (150 grams) portions before freezing. Don’t worry if they don’t completely harden in the freezer, this is completely normal. This keeps for two weeks in an airtight container in the fridge, or in the freezer for up to three months.
