Fancy fish sticks

All you need is whatever type of fish or seafood you want to use, a box of tempura batter mix, and some club soda.

Ingredients
Sweet chili sauce
- 4 tablespoons plum sauce
- 1 tablespoon sambal
- 1 tablespoon ricevinegar
Tartar Sauce
- 4 tablespoons mayonnaise
- 1 tablespoon sour cream
- 2 tablespoons relish or chopped pickles
- 1 tablespoon dill
- Juice of 1/2 lemon
- Pinch of salt and black pepper
Ginger Wasabi Dip
- 1 teaspoon shaved ginger
- 4 tablespoons mayonnaise
- 1 teaspoon wasabi
- Juice from one lime
- Pinch of salt, to season
Fish Sticks
- 2 oz pieces of salmon, halibut and shrimp
- One box tempura batter
- 355 ml ice cold club soda
- 1 lemon
Directions
Make Sauces
- Mix plum sauce, sambal and rice vinegar together for sweet chilli sauce. Set aside for serving.
- For tartar sauce, mix mayonnaise, sour cream, relish or chopped pickles, dill lemon juice, salt and pepper together. Set aside for serving.
- To make ginger wasabi dip, mix ginger, mayonnaise, wasabi, lime juice and salt together. Set aside for serving.
Fish Sticks
- Follow the tempura mix box instructions and use ice-cold club soda instead of water for extra crispy batter.
- Fry each piece of fish using canola oil in a heavy bottom pan at 325 to 350°F until golden.
- Skewer and lightly salt the fish. Serve with fresh lemon and three dipping sauces. Enjoy!
