Make this homemade ice cream that's rich but not overly sweet and smooth on the palate.
1 cup whipping cream
1/2 cup milk
1/3 cup brown sugar
1 tablespoon tahini
1 tablespoon vanilla bean paste
3/4 teaspoon salt
1/4 teaspoon xanthan gum
Combine cream, milk, sugar, tahini, vanilla, and salt in your blender. On low, start blending to incorporate then slowly sprinkle in the xanthan gum. Blend for a few seconds to evenly incorporate then transfer to a resealable container.
When ready to churn (make sure your ice cream bowl has been in the freezer for at least 24 hours), turn on your ice cream machine and add the mixture. Churn for about 20 minutes (or more if you like thicker ice cream), then transfer to a container and place in the freezer to harden. Enjoy!
