Ingredients
Lavender syrup:

1/4 cup (60 milliliters) water

1/4 cup (60 grams) sugar

1 tablespoon (3 grams) dried food grade lavender
Cocktail:

1 cup of ice
-
90 milliliters (3 ounces) gin

45 milliliters (1.5 ounce) lemon juice

30 milliliters (1 ounce) Lavender Syrup

120 milliliters (4 ounces) sparkling wine
-
2 lemon twists
Directions
Lavender syrup:
- Combine water, sugar and lavender in a small saucepot over medium heat. Bring to a boil, reduce heat and simmer gently for five minutes.
- Remove from heat, cover and steep for five minutes. Cool completely.
- Strain syrup through a fine mesh sieve and cool completely, about 20 minutes.
Cocktail:
- Fill a cocktail shaker with ice.
- Add gin, lemon juice, and lavender syrup.
- Shake well and strain into two flutes.
- Top with sparkling wine. Garnish with a lemon twist.
