French 75


Lavender syrup:

  • 1/4 cup (60 milliliters) water
  • 1/4 cup (60 grams) sugar
  • 1 tablespoon (3 grams) dried food grade lavender


  • 1 cup of ice
  • 90 milliliters (3 ounces) gin
  • 45 milliliters (1.5 ounce) lemon juice
  • 30 milliliters (1 ounce) Lavender Syrup
  • 120 milliliters (4 ounces) sparkling wine
  • 2 lemon twists


Lavender syrup:

  1. Combine water, sugar and lavender in a small saucepot over medium heat. Bring to a boil, reduce heat and simmer gently for five minutes.
  2. Remove from heat, cover and steep for five minutes. Cool completely.
  3. Strain syrup through a fine mesh sieve and cool completely, about 20 minutes.


  1. Fill a cocktail shaker with ice.
  2. Add gin, lemon juice, and lavender syrup.
  3. Shake well and strain into two flutes.
  4. Top with sparkling wine. Garnish with a lemon twist.
