You can stretch your burger by mixing it with black beans and packing it all into a delicious quesadilla.

Ingredients
1 tablespoon of extra virgin olive oil
2 frozen burger patties
1 cup salsa
1 cup canned no salt added black beans, drained and rinsed
1 cup frozen bell peppers
8 small whole wheat tortillas
3/4 cup shredded sharp cheddar cheese
Garnish with:

Salsa
Greek yogurt
Cilantro
Directions
Preheat oven to 400 F.
Preheat a large nonstick skillet over medium heat. Add the burgers frozen and cook for six minutes. Once it is thawed through enough, start to break up the patties with a wooden spoon, then add in the salsa, black beans, and bell peppers. Cook until thickened and warm, about four to five more minutes.
Arrange four tortillas on a baking sheet. Divide half of the cheese over the tortillas, top with the beef and bean mixture, and the remaining cheese. Finish with the tortillas and bake for 11 to 13 minutes or until the cheese melts and the edges are golden brown.
