Greek salad stuffed mini peppers

These peppers are prepared Greek style with flavour-packed veggies and creamy feta will be a fan favourite at your next party.

Ingredients
- 8 mini pepper, sliced in half
- 1/2 cup crumbled feta cheese
- 1/2 cup English cucumber, finely diced
- 1/2 cup tomato, seeded and finely diced
- 1/4 cup pitted kalamata olives, finely diced
- 2 tablespoons Greek salad dressing
Directions
- Prepare the mini peppers by cutting them in half lengthwise and removing any seeds. Arrange them on a platter.
- In a medium bowl, combine the feta cheese, cucumber, tomato, kalamata olives, and Greek salad dressing.
- Fill each mini pepper with the greek salad.
- Serve immediately or store in the refrigerator for up to three days. Enjoy!
