Green with envy cocktail

A honeydew melon in a cocktail?! Yes, please! This tasty drink is actually alcohol-free, making it a great option for anyone of any age who wants to join in on the Pride celebrations. Sweet, minty and a whole lot of fun, this drink is perfect for the hottest summer day!

Ingredients

  • 2 cups honeydew melon, cubed
  • 1/4 cup fresh mint
  • 2 limes, juiced
  • 1 tablespoon simple syrup (recipe to follow)
  • Mineral water

Simple syrup:

  • 1 cup granulated sugar
  • 1 cup water

Directions

Cocktail:

  1. Add honeydew, mint, lime juice and simple syrup to a blender and blend until smooth. Strain through a fine mesh sieve into a cocktail shaker filled with ice. Shake and pour over ice into cocktail glasses, top with mineral water and garnish with fresh mint.

Simple syrup:

  1. Add sugar and water to a small saucepan and bring to a simmer. Stir until all the sugar has dissolved. Remove from heat and let cool completely. Store in a mason jar in the fridge for up to three weeks.
