Make brunch easy and delicious with these french toast fruit skewers. Made with full fat coconut milk, cinnamon, flaxseeds and chickpea flour, this classic brunch favourite is totally vegan but packed full of the flavour you know and love.

Vegan French Toast
4 thick slices of stale bread
1 cup full fat coconut or almond milk
1 tablespoon nutritional yeast
1 tablespoon ground flax seeds
3 tablespoons all-purpose flour or chickpea flour
1/4 cup maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
Olive oil for frying
Fruit Skewers
3-5 strawberries
1-2 large bananas
Directions
Add 1 cup of full flat coconut or almond milk, 1 tablespoon nutritional yeast, 1 tablespoon ground flax seeds, 3 tablespoons of chickpea or all-purpose flour, 1 teaspoon cinnamon, 1 teaspoon vanilla extract into a blender. Blend until completely combined.
One at a time, dip the bread slices into the mixture and let sit for a minute to let the mixture soak in.
Add oil to a non-stick pan on medium heat and sauté bread until golden and crispy.
