Lemon and herb shrimp rolls

Nothing says summer like a soft, buttery shrimp roll. These delicious dinner rolls are brushed with butter and gently toasted in the oven before being stuffed with incredible lemon and herb shrimp salad made with cooked shrimp, mayo, lemon juice, fresh parsley and dill, and a hint of spicy horseradish to take them right over the top.

Ingredients

  • 6 dinner rolls
  • 1 tablespoon salted butter, melted
  • 1 lb cooked shrimp
  • 1 celery rib, finely diced
  • 2 green onion, thinly sliced
  • 1/4 cup mayonnaise
  • 1 lemon, juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 2 teaspoons prepared horseradish

Directions

  1. Preheat the oven to 350°F.
  2. Make a slice on the top of each dinner roll and then arrange them on a baking sheet. Brush the top of each roll with melted butter. Bake for five minutes, just until they are heated through.
  3. In the meantime, in a large bowl, mix together the shrimp, celery, green onion, mayonnaise, lemon juice, parsley, dill, and horseradish. Season with salt and pepper to taste. Stuff each roll with the shrimp salad. 
  4. Serve immediately. Enjoy!
